Is there really anything better than peanut butter? I don't think so, but I KNOW there is nothing better than peanut butter cupcakes with cream cheese frosting, absolutely nothing! I hope you all enjoy this recipe as much as I did.
Ingredients
4 tbsp butter, softened
11/4 cups brown sugar
1/3 cup crunchy peanut butter
2 eggs, lightly beaten
1 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder
1/3 cup milk
Frosting
1 cup full-fat soft cream cheese
2 tbsp butter, softened
2 cups icing sugar
- Beat together butter, sugar, and peanut butter until well mixed.
- Gradually add the eggs, beating well after each addition, then add the vanilla extract.
- Sift in the flour and baking powder and then, using a metal spoon, fold them into mixture, alternating with the milk.
- Bake the cupcakes for 25 minutes, or until well risen and golden brown. Transfer to wire rack and let cool.
- To make the frosting, beat together cream cheese and butter until smooth.
- Sift icing sugar into mixture, then beat together until well mixed.
- When the cupcakes are cold, add frosting.
