Chocolate Love-Cups


Happy Valentine's day! 
This is my favorite chocolate cupcake recipe! If you love fudgey chocolate cupcakes you'll love it too. With their pretty pink frosting, my love-cups make the perfect Valentine's day treat!

8 tbsp butter, softened
1/2 cup sugar
2 eggs, lightly beaten
1/2 cup white flour
1/4 cocoa powder


Icing
6 tbsp butter, softened
1 1/2 cups icing sugar
1 tbsp milk
2-3 drops of vanilla extract


Preheat oven to 350. Put butter and sugar in a bowl and beat together until light and fluffy. Gradually add the eggs, beating well after each addition. Sift in the flour and cocoa and fold into mixture.


Spoon batter into prepared muffin pan (I don't use muffin liners, I grease the pan with cooking oil and a pastry brush.). I get about six large cupcakes from this recipe but you could easily make twelve in a smaller pan.
Bake for 15-20 minutes, or until risen and firm to the touch. Transfer to a wire rack and let cool.


To make buttercream topping, put butter in a bowl an beat until fluffy. Sift in icing sugar and beat together until well mixed, adding the milk and vanilla extract.

Frosted Peanut Butter Cupcakes



Is there really anything better than peanut butter? I don't think so, but I KNOW there is nothing better than peanut butter cupcakes with cream cheese frosting, absolutely nothing! I hope you all enjoy this recipe as much as I did.


Ingredients
4 tbsp butter, softened
11/4 cups brown sugar
1/3 cup crunchy peanut butter
2 eggs, lightly beaten
1 tsp vanilla extract
1/2 cups all-purpose flour
2 tsp baking powder
1/3 cup milk


Frosting
1 cup full-fat soft cream cheese
2 tbsp butter, softened
2 cups icing sugar

  1. Beat together butter, sugar, and peanut butter until well mixed. 
  2. Gradually add the eggs, beating well after each addition, then add the vanilla extract.
  3. Sift in the flour and baking powder and then, using a metal spoon, fold them into mixture, alternating with the milk.
  4. Bake the cupcakes for 25 minutes, or until well risen and golden brown. Transfer to wire rack and let cool.
  5. To make the frosting, beat together cream cheese and butter until smooth.
  6. Sift icing sugar into mixture, then beat together until well mixed.
  7. When the cupcakes are cold, add frosting.
